Bacon Gouda Onion Burgers
Ingredients:
- Ground beef patties
- Sliced smoked gouda cheese (one slice per burger)
- Bacon
- Brioche buns
- Salt & pepper
- Sweet pickles
For sweet onion sauce:
- Olive oil
- 2 yellow onions, sliced
- 1 beef bouillon cube
- 1 tsp brown sugar
- 2 sprigs of fresh thyme
- ¼ cup water
Directions:
For the sweet onion sauce:
- Since this part of the recipe takes the longest, start with it. Add a small drizzle of olive oil to a medium skillet and heat slowly to medium heat.
- Add sliced onions to skillet along with bouillon cube, brown sugar, thyme, and water.
- Simmer until the onions are soft and the consistency is thick and jammy, about 3 minutes.
- Remove the thyme sprigs, turn off the heat, and set the onion sauce aside.
For the burgers:
- Season burger patties with salt and pepper and grill to desired doneness. Top each burger with a slice of Gouda cheese.
- While the burgers are grilling, cook the bacon – this step is great to do on your new or used RV’s outdoor kitchen! Remove bacon from heat once crispy, and drain off most of the bacon grease, saving just a bit in the pan for grilling the buns.
- Grill the brioche bun halves to a toasty brown with the remaining bacon grease.
- Assemble the burgers: toasted brioche bun, Gouda burger, bacon, sweet pickles, and sweet onion sauce. Enjoy!
